Mint Ice Cream Dessert
Eric has made this dessert for my birthday the past three years, and before that my mom made it for me for many years. It is a birthday tradition that means a lot to me and I'm so glad it is continuing into my adulthood. It has to be done in a few different steps, so it typically takes us at least two nights to make it. Knowing that makes me feel extra special when someone puts in all that time just for me. What You Need
½ c. margarine
1 lb. Oreos, crushed
½ gallon mint chocolate chip ice cream, softened
2 c. powdered sugar
1½ c. evaporated milk
1 c. semi-sweet chocolate chips
1 tsp. vanilla
½ c. butter or margarine
Melt ½ cup margarine and mix with crushed Oreos. Press into 9x13-inch pan. Chill.
Spread softened ice cream on top of crust. Freeze.
Mix powdered sugar, evaporated milk, butter and chocolate chips in saucepan and bring to a boil. Boil for eight minutes, stirring constantly. Remove from heat and add vanilla. Cool.
Pour chocolate sauce over ice cream and freeze.
